For Shortcrust Pastry:

250 g flour
125 grams butter
70 g icing sugar
2 egg yolks
a pinch of salt

For Pastry Cream:

50 ml milk
4 egg yolks
100 g sugar
1 split vanilla pod
60 g flour
1 pinch salt
500 grams strawberries

First of all mix all purpose flour, icing sugar and salt in a bowl.
Then cut the butter into small pieces and knead the dough until you get a sandy consistency.
Add the egg yolk and mix until you get a smooth paste.
Wrap the dough in plastic wrap and put it in the fridge for at least 30 minutes.
Preheat your oven to 180 degrees then spread your dough into a buttered pie pan.
Prick the bottom with a fork, cover with a sheet of baking paper and dried beans or baking beads, and then bake for 15-20 minutes.

Preparing the Pastry Cream:

First put the milk in a saucepan, add the vanilla pod and seeds, a pinch of salt and bring to a boil over medium heat.
Then blanch the egg yolks with sugar in a bowl with a beater.
Add the flour to the top and continue to whisk then pour the hot milk over the top – without the pods – gently, whisking constantly with the whisk.
Pour your mixture into a clean saucepan and cook over low heat, stirring with a wooden spoon, until the cream has thickened.
Once your cream has thickened, turn off the heat and then pour into a bowl, add butter, stir and cover in film.
Then put it in the fridge and let it cool for at least 60 minutes.
Wash and peel your strawberries and then cut them into pieces.
When your dough is cooked and chilled, spread your pastry cream on top and place your strawberries on top.
