Mango Panna Cotta: A refreshing and satisfying dessert

This creamy and refreshing dessert from Italy has become increasingly popular in recent years due to its delicate texture and fruity flavour. The combination of silky panna cotta and juicy mango puree strikes a harmonious balance between creaminess and tanginess, making it a perfect dish to enjoy with any meal or any time of the day.

Component :

40 cl liquid cream
20 cl milk
100 g sugar
2 sheets of gelatin
2 very ripe mangoes
3 teaspoons lemon juice
8 g powdered gelatin

Preparation of Mango Panna Cotta:

First peel the mangoes, cut into cubes and blend with the lemon juice in the bowl of your food processor, reserving 1/3 for garnish.
Then add the gelatin powder and mix a second time for 30 seconds.
Lean your glasses over the towels in the cake pans so they don’t slip and fill them with your mango coulis.
Refrigerate for 20 minutes or till the coulis is set.
Soften the gelatin sheets in a bowl of cold water for 5 minutes.
Pour cream and milk into a saucepan, add sugar and heat them without boiling or stirring.
Once the sugar dissolves, take the pan off the heat, add the strained gelatine leaves and mix with a spatula.
Leave to cool to room temperature, take your glasses out of the freezer, then top with your cream and pop back in the freezer for 20 minutes.
finally, remove them from your glasses, pour over your reserved mango coulis, garnish with mango slices and serve, enjoy your meal.
