Molten Lemon Shortbread: With Your Tea

250 g flour
rind of 2 lemons
125g soft butter
1 egg + 1 egg yolk
100 g sugar
1 packet of baking powder
Preparation of Fondant Lemon Shortbread:
First of all, melt the butter in the microwave.
Then mix flour, baking powder, sugar and a pinch of salt in a bowl.
Add egg and egg yolk and mix with spatula.
Add melted butter, mix, then add lemon rind and keep mixing to make a paste.
Form a ball of your dough, wrap it in film and put it in the fridge for at least 45 minutes.
Preheat your oven to 180°, line a baking sheet with parchment and flour a work surface.
Roll out the dough with the help of a rolling pin and then shape your cookies with a cookie cutter.
Place your cookies on a baking sheet and place in the oven to cook for 10 to 12 minutes.
Mix the juice of 1 lemon with 50 grams of icing sugar and roll out your biscuits before serving.
