Then take the pan off the heat and let it cool for a few minutes.
Then in another large bowl, beat the egg yolks and sugar until the mixture is frothy and pale.
While whisking constantly, slowly pour the hot milk and cream mixture into the bowl containing the egg yolks.
Pour the mixture into a saucepan and cook over low heat, stirring constantly with a wooden spoon. The mixture will gradually thicken, but do not let it boil.
Remove the pan from the heat and allow the mixture to cool completely to room temperature. When cool, add vanilla extract and remaining liquid cream and mix well.
Pour the mixture into an ice cream maker and run it according to the manufacturer’s directions until the ice cream reaches a firm, creamy consistency.
Then transfer the ice cream to an airtight container and place it in the freezer for at least 4 hours or until firm.
