Pumpkin and Carrot Veloute with Cookies: Light and Creamy Soup!

During the colder months, there’s nothing like a piping hot bowl of pumpkin soup to warm you from the inside out.
This comforting soup is easy to prepare and can easily be adapted to your tastes.
Whether you like your soup a little tangy or like it mild, Cookio’s Pumpkin and Carrot Veloute is the perfect dish to enjoy when the leaves start turning and the weather turns cold.

material:

    • 1 pumpkin – between 750 grams and 1 kilo
    • 3 carrots
    • 1 vegetable stock cube
    • 1 liter water
    • 20 cl liquid fresh cream
    • salt
    • pepper

preparation :

First cut the pumpkin pulp into cubes, peel the carrots and cut them into rings.
Then put them in your cookie bowl, crumble the stock cubes over the top, season with salt and pepper, and cover everything with water.
Then start the rapid cooking – under pressure of your kukio for a period of 20 minutes.
Put everything in the bowl of your mixer, add cream according to desired texture and mix.
Finally here is your soup, serve and good appetite to all.
