Lemon Shortbread Squares – A delicious pie for your dessert.

Component :

  • 160 g flour
  • 70 g icing sugar
  • 16 cl lemon juice
  • 100 grams cold butter
  • zest of 1 lemon
  • 150 grams) sugar
  • 3 eggs
  • 2 tbsp cornstarch
  • 1/2 tsp salt

Preparation :

First of all preheat your oven to 180°, line a square mold with parchment paper.
Then mix flour, icing sugar and salt in a bowl, add cold butter in small cubes and mix everything by hand to make a paste.
Pour your batter into the mold and spread it with your hands to make an even layer.
Then put your mold in the oven to cook for 20 minutes.
Meanwhile prepare the lemon cream by heating the lemon juice with the zest in a saucepan over medium heat.
Blanch the eggs with the sugar and cornstarch in a bowl with a beater, then pour the boiling lemon juice over the top while whisking.
Return your mixture to the saucepan, return to medium heat, and continue cooking for 5 to 6 minutes, until thickened.
Pour your cream over the cooked and golden pastry, spread over the entire pastry and then return to the oven to cook for 10 to 12 minutes.
At the end of cooking, let cool at room temperature for 2 hours, and then cut the sides of the cake.
Finally cut into squares and serve with fruits of your choice and a sprinkling of icing sugar, Bon Appetit everyone.
