Cauliflower Pizza Dough: The Original Recipe!

Component:

500 grams cauliflower
60g grated Emmental cheese
2 eggs
1 tbsp curd

Preparation :

First of all, preheat your oven to 180° and line a baking sheet with parchment paper.
Then cut the cauliflower into chunks, put them in your blender and the bowl of lentils.
The goal is to get cauliflower semolina, know that the finer the semolina, the more it will puff up during cooking.
Place them in a clean tea towel and squeeze them to remove as much liquid as possible.
In a large bowl, whisk the eggs with the cheese and yogurt, then top with your cauliflower semolina.
Make a paste by mixing it with marise and then spread it on a plate by pressing it with a spoon.
Place the plate in the oven to cook for 20 minutes, opening the oven door halfway through to allow the steam to escape.
Then turn your dough over and continue cooking for another 20 minutes, always opening the door halfway through cooking to let off steam.
At the end of cooking, garnish your dough as you wish and return to the oven to finish cooking.
