Component :

For the Choux Pastry:

  • 175 g flour
  • 5 eggs + 1 egg yolk
  • 12 cl milk
  • 12 cl water
  • Salt

For Whipped Cream:

  • 40 cl of liquid cream
  • 12 grams powdered sugar
  • 75 g icing sugar
  • 2 tsp vanilla powder

Preparation :

Preparation of choux pastry:

First put the liquid cream in the fridge, it should be very cold for the whipped cream, preheat your oven to 180°.
Put the water, milk and butter in pieces in a saucepan, put on medium heat and stir to melt the butter, then add 2 pinches of salt and mix.
Then add the flour little by little, beating with a whisk, it is necessary that the flour is well integrated and the dough is dry, count about 5 minutes.
After putting the flour in a salad bowl, prepare a uniform dough by mixing 3 eggs 1-1 with Maryse.
Line a baking sheet with parchment paper and fill a piping bag with your batter.
Shape the cabbage into a plate, keeping a space in the center, then beat the egg yolk with 2 tablespoons of water and brush until evenly colored.
Then put your plate in the oven to cook for 25 minutes, watch the cooking according to the size of the cabbage.

Preparation of Whipped Cream:

Take your liquid cream out of the fridge and pour it into a salad bowl.
Beat with a mixer for about 2 to 3 minutes then add sugar, icing sugar and beat for 1 more minute.
Add the vanilla and whisk for 1 more minute, then fill a piping bag with your cream.
At the end of cooking the cabbages, let them cool for a moment and then cut them in half horizontally.
Fill them with your whipped cream, then top with the other half of the dough, sprinkle with icing sugar before serving, enjoy your meal.
