Sweet Lemon Souffle: An Original, Light and Fluffy Dessert

The key to a successful lemon soufflé is a light, airy texture that melts in your mouth.
It’s easy to prepare, but it takes cooking in a bain-marie and a little patience to get the best results.
It is a perfect dessert for any occasion, be it a formal dinner party or a weekend family gathering.

Component :

12 cl lemon juice
3 eggs
50 grams butter
200 grams castor sugar
zest of 1 lemon
25 cl milk
50 g flour
breaking sugar

Preparation of Sweet Lemon Souffle:

First of all, preheat the oven to 180° and grease a mold with butter.
Then separate the egg whites from the yolks and beat the softened butter in a bowl with sugar and lemon zest with a beater.
Pour lemon juice on top, add egg yolk and flour, and then continue to beat.
Add milk, continue whisking for a uniform preparation.
Whisk the egg whites in another bowl and then add them to your preparation, mixing them gently with a spatula.
Pour your preparation into the mold and then place it in a large pot filled halfway up the sides with hot water.
Then put it in the oven to cook in a bain-marie for 50 minutes.
Finally take out your mold, sprinkle with icing sugar, let cool and serve, bon appetit everyone.
