Component :
2 kg apricots
2 kg sugar
50 cl water
2 vanilla pods
Preparation of Apricot Jam with Vanilla:
First wash the apricots, cut them in half with a knife and make pits.
Then cut the vanilla pod in half lengthwise, collect the seeds.
Put the apricot pieces, sugar, vanilla bean and seeds in a bowl, mix, cover and leave overnight.
The next day, filter them and pour their juice into a basin, add vanilla pods with water and bring to a boil.
Then add the apricots and cook over a medium-low heat for about 30 minutes, skimming and mixing as you go.
You can also crush them with a skimmer during cooking.
Once your jam is ready, remove the vanilla pod, fill your jars, and let them cool to room temperature.
