King Cake: The most requested dessert on Christmas!

Galette des rices is a very popular pastry all over the world during year-end celebrations.
I propose in this recipe how to succeed this galette, it is also called the cake of kings, at home.
Your guests will be impressed with this delicious dessert, let’s take it step by step!

material:

For Brioche:

500 g flour
125 g sugar
100 grams butter
24 cl milk
35g fresh baker’s yeast
2 eggs
3 tbsp orange blossom water
zest of 1 lemon
zest of 1 orange
8 grams salt

For Garnish:

candied fruit
flaked almonds
1 egg
2 tbsp milk
1 tbsp sugar

For Whipped Cream:

25 cl liquid cream
35 g icing sugar
1 sachet of vanilla sugar

preparation :

Preparation of Brioche:

First of all, heat milk to 20° in a saucepan and crumble yeast on top, add 4 tbsp all purpose flour and 1 tbsp sugar, mix.
Leave for 15 to 20 minutes, melt the butter and let it cool.
Sift the rest of the flour and sugar into a large bowl, mix by hand and make a well in the centre.
Add the eggs, melted butter, orange blossom water, lemon and orange peel, then mix everything together by hand.
Knead gradually adding the milk mixture to obtain a smooth dough and then transfer it to a clean work surface and knead for 5 minutes.
Make a ball out of your dough, cover it with a clean tea towel and let it rest for 50 to 60 minutes.
Once your dough has doubled in volume, lightly knead it again and form a crown.
Line a baking sheet with parchment paper, then place your crown on top, cover it and let it rest a second time.

Preparation of decorations:

Preheat your oven to 180° then beat the egg yolks with the milk and sugar and put the liquid cream in the fridge – it should be very cold.
Brush your dough then sprinkle it with candied fruits and slivered almonds.
Then put to cook in the oven for 20 to 25 minutes, let cool on a plate at the end of cooking.

Preparation of Whipped Cream:

First, take your cream out of the fridge and pour it into a stainless steel bowl.
Then beat it with a beater for 1 minute so that it starts foaming.
Add sugar and icing sugar and beat on high speed for 6 to 8 minutes.
Continue beating until the whisk comes out.
Cut your brioche in half and decorate the bottom half with whipped cream, then place the other half on top.
Finally here is your cake you just have to cut it into slices and serve, have a good appetite everyone.
