Component:

150 grams biscuits
50 grams butter
300 g 35% cream
400 grams ricotta
100 g sugar
1 tsp vanilla extract
20 g gelatin powder
8 cl water
30 ml lemon juice

Preparation :

First of all, melt the butter and keep it aside.
Crush the biscuits in the bowl of your blender, put them in a salad bowl, add melted butter and stir with the marmalade.
Line and line a springform pan with parchment paper, then pour in your batter and press into the bottom of a glass to create an even base.
Then put your mold in the fridge for at least 45 minutes.
In a bowl filled with 8 cl of water, add 15 g of gelatin powder and soak to dissolve the gelatin after heating.
In a bowl, beat your cream with a mixer on medium speed for 1 minute, adding the sugar drop by drop, then add the ricotta and vanilla while beating.
Once your mixture is homogeneous, add the gelatin water mixture to it and then mix well with a beater.
Take your mold out of the fridge then spread your preparation onto the biscuit base, grease the surface with marise then put it back in the fridge for 40 minutes.
Pour 10 cl of lemon juice into a saucepan and the rest of the powdered gelatin – 5 g – after heating, mix with a fork.
After the gelatin has dissolved, pour the remaining lemon juice – 20 cl – into a bowl, pour hot juice with gelatin on top and mix.
Take your mold out of the fridge then pour your lemon juice in a single layer over the cream and put it back in the fridge for at least 120 minutes.
Take out your mold, open the mold, remove the parchment paper, then slice and serve.
