Component :

For the Chocolate Sponge Cake:

  • 100 g flour
  • 4 eggs
  • 125 g sugar
  • 30 g cocoa

For Cream:

  • 24 cl liquid cream
  • 150 g mascarpone
  • 100 g sugar
  • 1/2 tsp vanilla extract

Preparation :

Preparation of Chocolate Sponge Cake:

First of all, preheat your oven to 180° and line a baking sheet with parchment paper.
Then beat the egg whites with sugar in a bowl with the help of a beater.
Once your mixture is white and frothy, sift the flour and cocoa over it and then mix with the Maryse.
Keep mixing until you get a completely uniform paste, then spread it out in an even layer on a plate.
Then put your plate in the oven to cook for 10 to 14 minutes.
At the end of cooking, sprinkle the surface with icing sugar, put a sheet of parchment paper on top, then another baking sheet on top.
Then remove the stuck parchment paper during cooking and roll your sponge cake in new parchment paper.
Then wrap it again in a clean towel and set it aside to cool.

Preparation of Cream:

First of all, put the cream in a bowl, add sugar and beat it with a mixer on medium speed for 3 to 4 minutes.
Add vanilla extract and continue beating for 1 more minute.
Then add mascarpone and whip on medium speed for 2 minutes.
Open your sponge cake and then using a spatula spread your cream in an even layer.
Then remove the sponge cake from the parchment paper, roll it and keep it in the fridge for at least 2 hours before serving.
Cover and serve in slices and wish everyone a good appetite.
