Grandma’s Recipe Quince Paste

Quince paste is a delicious, thick spread made from quince fruit.
It can be enjoyed alone or as an ingredient in dishes.
If you want to add a new flavor to your repertoire, homemade quince jelly is a great option.

material:

1.5 kg quince
1 kg sugar
2 vanilla pods

preparation :

First cut the quince into four parts, remove the core and seeds and peel each quarter, so that it is easier, cut them into small pieces.
Put the pieces of each quarter into a cup filled with water and lemon juice so that they do not darken.
Then put them in a saucepan filled with water and bring to a boil and cook over medium heat for 20 minutes, while stirring occasionally.
Once you can easily point a knife into the quince meat, it means they are tender so stop cooking.

Strain them, then put them in the bowl of your mixer, mix and get a puree of quince.
Weigh your mash, it takes 750 grams of sugar per kilogram of mash.
Put quince puree in a saucepan, pour sugar on top and mix with a spatula.
Cut the vanilla pods in half, remove the seeds and pour everything into the pan and mix again.
Then put the pan on medium flame and cook for 25 to 30 minutes, while stirring occasionally.
Once it peels easily from the sides of the pan, remove the pan from the heat and discard the vanilla pods.
Cover a rectangular mold with cling film, spread the dough on top and smooth the surface with a spatula – to a height of 2 to 3 cm.
Then wrap the surface with cling film, let it cool for a moment before placing it in the fridge overnight.
