Cauliflower Pizza Dough: A Gluten-Free Alternative

600 grams cauliflower
2 eggs
60 grams grated Emmental cheese
1 tbsp curd

preparation :

First, preheat your oven to 180° and cover a baking sheet with parchment paper.
Wash the cauliflower, dry it, cut it into pieces and then put it in the bowl of your mixer and pulse until the cauliflower gets semolina.
Then place them between two paper towels and press down gently to release excess liquid, so that the pizza dough holds up well.
In a bowl, beat the egg with the curd and grated cheese, then add the cauliflower rice and beat with a spatula until the batter becomes homogeneous.
Spread your dough on a plate and make a circle and then put it in the oven to cook for 20 minutes, after 10 minutes open the door and let it evaporate.
Turn the dough over with a spatula and then continue to cook for 20 minutes, always opening the door after 10 minutes to release steam.
