Component :

  • 120 g white chocolate
  • 20 cl cream
  • 12 cl milk
  • 45 g sugar
  • 2 egg whites
  • 2g agar agar

Preparation :

First melt the white chocolate in the microwave or in a bain-marie.
After this, heat the cream in a saucepan on medium heat.
Then beat the egg whites with sugar in a bowl with the help of a beater.
In another saucepan, heat the milk with the agar agar and, while whisking, bring to a boil and cook for 30 seconds, still whisking.
Take the saucepan off the heat and add the hot cream and melted chocolate, then whisk with a whisk.
Pour your mixture into a bowl, leave to cool to room temperature then add the egg whites and mix with the Maryse.
Divide it into glasses and keep it in the fridge for at least 1 hour.
