Component :

For the Vanilla Panna Cotta:

  • 36 cl Full Liquid Cream 35% Fat
  • 1 vanilla pod
  • 40 g sugar
  • 1 gram agar agar

For the Strawberry Panna Cotta:

  • 24 cl of full liquid cream 35% fat
  • 180 grams strawberries
  • 30 g sugar
  • 1 gram agar agar

Preparation :

Preparation of Vanilla Panna Cotta:

First, pour the agar agar into a bowl and add 10 cl of cream while whisking gently, cut the vanilla pod in half and collect the seeds.
Then pour the rest of the cream into a saucepan, pour a mixture of seeds and vanilla pods, sugar and agar-agar on top.
Mix with a whisk, then bring to a boil while whisking with a whisk.
After filtering everything with a sieve, divide this mixture into 4 glasses and keep it in the fridge for at least 2 hours.

Preparation of Strawberry Panna Cotta:

Firstly pour the agar agar into a bowl and add 10 cl cream in a thin stream and whisk it to make it thin.
Then wash, peel, cut the strawberries into pieces and blend them to make strawberry puree.
Pour the strawberry puree into a saucepan, top with the remaining cream with agar-agar and sugar mixture, and then mix with a whisk.
Next, bring to a boil, whisk with a whisk, then bring to a boil over medium heat, stirring constantly for 2 minutes.
Then strain through a sieve into a bowl, let cool at room temperature, stirring occasionally.
Take your glass out of the fridge and spread your strawberry panna cotta over it and put it back in the fridge for at least 4 hours.
