Spinach Ricotta Lasagna

Lasagna with Spinach and Ricotta, a delicious recipe from French cuisine.

Spinach Ricotta Lasagna

16 lasagna sheets
650 grams spinach
1 clove of garlic
250 grams ricotta
75 grams grated Parmesan
70 g butter
50 grams flour
30 cl of milk
25 cl of liquid cream
1 egg
1 tablespoon olive oil


Mash the garlic and put it in a pan with oil and heat it.
Then add spinach and mix with a wooden spoon, add salt and pepper.
Let it cool for a while then chop the spinach.
Mash the ricotta in a bowl, then add egg, then spinach on top and mix.
Combine milk and cream fraiche in a bowl.
After melting the butter in a saucepan over low heat, pour the flour over the top and turn with a spatula.
Slowly pour the contents of the bowl while stirring.
Remove pan from heat, then add 50g Parmesan, then nutmeg and salt and pepper, and mix gently.
Preheat your oven to 200°.
Butter a gratin dish, put a little béchamel in the bottom.
Place a layer of lasagna on top of the béchamel, then the spinach, then the béchamel.
Repeat this process until all the ingredients are exhausted.
Finish with a layer of lasagna and then sprinkle with the remaining 25 grams of Parmesan.
Put your dish in the oven for 25 minutes.
