Fried Rice with Zucchini and Beans, a delight for dinner tonight, here you will find the easiest recipe to make it at home.

  • 150 grams white rice
  • 1 zucchini
  • 1 green chili
  • water for cooking rice
  • 1 onion
  • 1 tbsp oil
  • 20 cl water
  • 1 can black beans
  • 1 can of crushed tomatoes
  • 1/4 tsp dry carom seeds
  • 60 grams grated cheddar cheese


To cook rice:
First put the rice in a saucepan and pour water over the top – between 30 to 3 cl of water.
When it comes to a boil, cover the pan and cook on medium heat for 15 minutes.
Then turn off the heat and let the rice stand in the covered saucepan for 10 minutes.

While the rice is cooking, cut the zucchini into rings and cut each ring into 2, chop the onion, rinse the beans, remove the seeds and chop the pepper.
Heat the oil in a large pan over medium heat, then add the zucchini, onion and pepper and fry for 5 minutes, while stirring.
Then add beans, undrained tomatoes, water and oregano and bring to a boil.
Then add rice on top and mix everything with a spoon and cook on medium flame for 2 minutes.
Then remove the pan from the heat and let stand for 6 minutes or until the liquid is absorbed.
Finally presenting your fried rice with zucchini and beans, sprinkle it with grated cheese and serve… good appetite for all.
