Delicious and top chocolate eclairs, a cake for your dessert or for afternoon coffee, here are easy recipes for at home and for the whole family.


For the Choux Pastry:

– 150 grams of flour
– 25 cl water
– 75 grams butter
– 4 eggs + 1 egg yolk
– 1 tbsp sugar
– Salt

For Cream:

– 80 + 140 g dark chocolate
– 30 cl milk
– 20 + 30 g butter
– 2 tbsp flour
– 3 tbsp sugar
– 1 egg + 2 egg yolks


Preparation of choux pastry:

First of all, preheat your oven to 180° and spread parchment paper on a baking sheet.
Then pour water into a saucepan, put the butter in pieces with sugar and a pinch of salt, put on the heat and bring to a boil.
Add the flour and stir with a spoon over medium heat, then add 1 by 1 in the egg, stirring constantly with the spatula.
Fill a piping bag with your dough and then shape a sausage onto your plate.
Brush them with egg yolk and then put the plate in the oven to cook for 10 to 12 minutes.

Preparation of cream:

First, pour milk in a saucepan, put 80 grams of chocolate into pieces and keep it on medium-low heat.
Beat eggs with 2 egg yolks and sugar in a bowl, once your mixture becomes frothy, add all purpose flour and keep whisking.
Pour the contents of the bowl into a saucepan and whisk everything over medium heat so that your cream thickens.
Then take the pan off the heat, add 20 grams of butter, stir with a spatula, leave to cool, and then fill a piping bag with your cream.
In a bowl, melt 250 grams of chocolate into pieces and 30 grams of butter in a bain-marie and set aside.


Poke a hole in each pudding and then fill with your cream using a piping bag.
Then dip the top in the melted chocolate and let it harden on the baking sheet.
