– 300 grams flour
– 60 grams ground almonds
– 60 grams chopped almonds
– 50 grams raisins
– 120 grams butter
– 75 grams of sugar
– 1.5 tsp dry yeast
– 12 cl milk
– 2 eggs
– 2 tbsp orange blossom
– 1 teaspoon salt

to brush:

– 1 sachet of vanilla sugar
– 1.5 tbsp milk


First put raisins in a bowl, put orange blossom on top and leave it to soak, dilute yeast in milk in another bowl.
Then in a big bowl add flour and salt, add sugar, milk mixture, eggs and knead it for 12 minutes.
Add butter to cubes, almond powder, raisins, then knead for 10 minutes, put your dough in a salad bowl, film it and let it double in volume.

Shape your brioche, place it on a baking sheet covered with baking paper and let stand for 45 minutes, then preheat your oven to 180°.
In a bowl, whisk vanilla sugar with milk, brush your brioche, sprinkle with sliced ​​almonds, and then place in the oven to bake for 30 to 35 minutes.
