Ingredients: for 6 people

– 2 cucumbers
– 3 tomatoes
– 1 onion
– juice of 1 lemon
– parsley

First wash the cucumber and tomato and cut it into cubes, chop the onion and chop the parsley.
Then put them in a salad bowl, add lemon juice, olive oil, a pinch of salt and pepper, mix everything.

– 10 cherry tomatoes
– 250 grams chickpeas
– 1 cucumber

For chickpeas, either use canned, rinse and drain them, or soak them overnight in a pot of water.
Steam your chickpeas for 30 minutes over medium heat – use a steamer pan and basket.
Meanwhile, wash and cut cherry tomatoes in half, cut cucumber, parsley and onion in half.
Put your vegetables in a salad bowl along with the chickpeas, add the olive oil, lemon juice, a pinch of salt and pepper, and mix.
Either serve immediately or keep in the fridge.

Tomato and Mozzarella Salad:

Ingredients for 4 persons

For the salad:

– 10 red cherry tomatoes
– 10 yellow cherry tomatoes
– 2 avocados
– Small balls of 120 grams mozzarella cheese
– 50 grams fresh basil

For Dressing:

– 2 tsp olive oil
– 2 tsp balsamic vinegar
– 1 teaspoon honey


First wash and cut the cherry tomatoes in half, peel the avocado pulp and cut it into cubes, chop the basil leaves.
Then put them in a salad bowl with cheese.
Mix vinegar and honey with olive oil in a bowl and then sprinkle your salad over and mix.
