Salted Butter Caramel Shortbread, a delicious cookie for your afternoon snack, here you will find the easiest recipe to make it at home.


For Shortbread:

– 250 grams flour
– 125 grams butter
– 1 vanilla bean
– 50 grams ground almonds
– 75 grams icing sugar
– 1 egg
– 1 sachet of vanilla sugar

For the Salted Butter Caramel:

– 200 g sugar
– 16 cl of whole liquid cream
– 75 grams semi-salted butter


Preparation of Salted Butter Caramel:

Firstly put sugar in a saucepan and melt it on medium heat with a wooden spatula to get caramel.
Once caramel is amber in color, add cream in 3 batches while stirring over medium heat.
Stir for 2 more minutes after the last addition, add the grated butter and stir to melt.
Then remove the pan from the heat, pour the caramel into a bowl and let it cool to room temperature.

Shortbread preparation:

First of all, put all purpose flour, almond powder, vanilla sugar, vanilla seeds and icing sugar in a bowl and mix with a spoon.
Add the cooled butter into small cubes, then mix everything by hand, then add the egg and mix to form a paste.
Make a ball out of your dough, fill it and put it in the fridge for at least 2 hours.
Then flour a baking sheet, roll out your dough with a rolling pin from top to bottom, cut out your shortbreads with cookie cutters.
Make a dough from the rest of the dough, roll it out and cut more shortbreads.
Place your shortbread on a baking sheet covered with baking paper, put it in the oven at 160° to bake for 13 to 15 minutes.

Melt the chocolate in a double boiler, then fill a pastry bag with your melted chocolate.
Slightly warm your caramel in the bain-marie, then spread 1 Tbsp on each shortbread and line the top with the melted chocolate.
Sprinkle with sugar then let harden at room temperature for a while.
