Component:

– 250 grams flour
– 40 grams of sugar
– 4 eggs
– 50 cl milk
– 40 g cold butter
– 2 tbsp orange flower water
– Salt
– 36 cl heavy cream
– 120 grams dark chocolate

Preparation:

Firstly, in the bowl of your food processor add all purpose flour, sugar and a pinch of salt and mix for a few seconds.
Beat the eggs in a bowl and then add them to the bowl with 12 cl of milk and mix for a few seconds.
Then pour the remaining milk over the top, mix for 30 seconds, then add the butter and orange blossom water and mix for 15 seconds.

Heat a pan then take a ladle of your dough, pour it into the pan, tilt it to cover the entire surface and cook for 2 minutes.
Turn your pancakes over with a spatula and cook for 30 seconds, doing the same with the rest of the dough.
Then in a bowl beat the cream with your mixer on medium speed for 3 minutes, put in a piping bag and keep in the fridge.
Then melt the chocolate in a double boiler.
