Chocolate and pear tart on sweet dough, a delicious cake for your dessert, here’s an easy recipe for at home and for the whole family.

Component:

For Sweet Pastries:

– 300 grams flour
– 90 grams of sugar
– 120 grams butter
– 3 tsp cocoa powder
– 1 egg
– Salt

For Garnish:

– 80 grams dark chocolate
– 24 cl of liquid cream
– 12 cl of whole milk
– 1 vanilla pod
– 2 eggs
– 35 grams of sugar
– 3 pears
– 40 grams of honey

Preparation:

Preparation of sweet pastries:

First of all, in a bowl, with a pinch of salt and sugar in a bowl, beat the butter with a whisk and get the cream.
Then add the egg while whisking, then add the flour and cocoa powder but this time mix everything by hand to make a paste.
Make a ball out of your dough, wrap it in film and let it rest for at least 1 hour.
Then place your ball between two sheets of parchment paper, lower it with a rolling pin and put in the fridge for 1 hour.
Roll out your dough, spread it into a round pie pan — prick the bottom and sides — with a fork and put back in the fridge.

Filling Preparation:

First, cut the vanilla bean in half lengthwise and collect the seeds.
Then pour milk into a saucepan, add cream, vanilla pod and seeds and bring to a boil.
Then remove the pods and let your milk cool for 8 minutes.
During these 8 minutes, beat the eggs with the sugar in a bowl using your mixer on medium speed.
Then pour the milk over the top and add the dark chocolate to the crumbs, leave for 2 minutes to melt the chocolate, then mix everything with an immersion blender.
Once everything is mixed, film your salad bowl and set aside.
Peel, core and quarter your pears then in a large skillet to caramelize the honey – just to color it.
Then add the pear quarters and brown them on the caramel and stir for 3 minutes over medium heat and preheat your oven to 160°.
Take your mold out of the fridge and put it in the oven to blind bake for 10 minutes.
Then using the spatula pour your chocolate cream over the dough and place the pears on top.
Then put your mold in the oven to cook for 15 minutes, let it cool for a moment and unmold it.
Finally your chocolate and pear tart is on a sweet pastry, sprinkle with chocolate shavings, cut and serve, enjoy your meal.
