Cake with almonds and carrots, a delicious soft cake for a cup of coffee for afternoon tea, here is an easy recipe at home.


– 160 grams ground almonds
– 125 grams cornstarch
– 250 grams carrots
– 80 grams chopped almonds
– 3 eggs
– 140 grams of sugar
– 2 tbsp orange or lemon juice
– 2 tbsp orange flower water
– peel of 1 orange
– 1/2 tsp cinnamon
– 1 tsp baking powder
– Salt


First separate the yolk from the egg white, peel, wash and grate the carrots, preheat your oven to 180°, butter a cake tin.
Whisk the yolks with sugar in a bowl until you get a white cream.
Add the orange blossom water and the orange juice and zest — or lemon juice — over the top and continue whisking on medium speed.
Add grated carrots, cornstarch, ground almonds, chopped almonds, cinnamon, baking powder, a pinch of salt and mix everything with a spatula.
Beat the egg whites with your mixer, add them and mix with the spatula then pour your dough into the mold.
Then put your mold in the oven to bake for 30 to 35 minutes.
Finally your almond and carrot cake, sprinkle with honey and orange slices and everyone has a good appetite.
