Zucchini and Chickpea Salad recipe ww. A delicious starter for your dishes.
Try this Weight Watchers recipe, easy and for the whole family.

Ingredients for 6 people – per serving 2 sp.

  • 2 zucchini
  • 250 grams cooked chickpeas
  • 200 grams artichoke hearts
  • 1 onion
  • 1 garlic clove, minced
  • 8 cl of 50% reduced-fat vinaigrette
  • 1 tsp oil
  • 2 tbsp basil

Preparation:

First wash the zucchini and cut it in half lengthwise, then slice it diagonally, chop the onion and garlic, and wash and discard the chickpeas and artichokes.
Then in a skillet, add the onion, garlic and zucchini to the oil over medium-high heat and fry, while stirring with a spatula.
Then put them in a salad bowl, put chickpeas and artichoke hearts on top, sprinkle with vinaigrette, mix everything.
Lastly add chopped basil, mix and serve… bon appetit tous.
