Component:

– 1 shortcrust pastry – recipe here
– 650g Red fruit: Strawberry or Strawberry mix – Raspberry – Blueberry as per your choice
– 50 grams of sugar
– 35 grams butter
– 12 cl of liquid cream
– 24 cl milk
– 3 egg yolks
– 2 tsp cornstarch

Preparation:

First preheat your oven to 180° and put butter on a pie plate.
Roll out your dough with the help of a rolling pin, roll it into the mold, prick the bottom with a fork and then place it on a baking paper with the dried beans.
Then put it in the oven to cook for 15 minutes …
While cooking, heat the milk in a saucepan over low heat and then whisk the egg yolks in a large bowl.

Once your preparation is white, add cornstarch and stirring constantly and then pour your mixture into a saucepan of milk.
Bring the contents of the saucepan to a boil, stirring with a whisk, then add the butter, stirring to melt the butter and form pastry cream, set aside to cool.
In a salad bowl, whisk the liquid cream with the sugar to make the whipped cream, and then mix it with the pastry cream.
When the dough cools down, spread the cream mixture on top, garnish with red fruits and then keep it in the fridge.
