– 200 g sugar
– juice of 2 lemons
– 12 liters lemon juice
– 6 egg yolks
– 115 grams butter
First of all, put sugar in the bowl of your blender.
Then add lemon zest on top, mix on high speed for a few seconds.
Put the egg yolks in a saucepan and beat them with a whisk, then add the remaining sugar to the mixer bowl and continue whisking.
Once your mixture becomes frothy, add lemon juice to it and stir continuously, then place the pan on medium heat and whisk for 2 to 3 minutes.
Then remove the pan from the heat and add the cubed butter to it and whisk to melt it, then sift your cream through the sugar.
Then fill a jar with your mixture, let it cool for a while at room temperature after placing it in the fridge.
