Easy Homemade Lemon Tart, the most popular dessert in France, here I show you how to make it at home.


For the dough:

– 250 grams flour
– 40 grams ground almonds
– 125 grams butter
– 100 grams of sugar
– 1 egg
– 1 sachet of vanilla sugar
– Salt

For the Lemon Cream:

– juice of 5 lemons
– juice of 2 lemons
– 3 eggs
– 125 grams sugar
– 150 grams of butter
– 1 gelatin sheet


Preparation of Shortcrust Pastry:

Firstly, put the butter in a bowl and beat with an electric mixer on medium speed for 2 minutes.
Then add sugar and vanilla sugar, salt and egg and continue whisking for 2 minutes.
Then add the flour and ground almonds and keep whisking until you have a dough – you can do it by hand at this point.
Make a ball out of your dough, place it between two sheets of baking paper and then roll it out with a rolling pin.

Then put the dough in the fridge for at least 2 hours.
Preheat your oven to 180°, butter a tart mold, spread your dough on the inside – bottom and sides – prick the bottom with a fork.
With the dried beans as a weight, place a sheet of baking paper on top – then put in the oven to bake for 15 minutes.
Remove the dried beans and baking paper and then cook for 6 minutes until a golden dough is … let cool.

Preparation of Lemon Cream:

First, whisk the eggs with the sugar in a metal skillet — double boiler — over medium-low heat over a saucepan of simmering water.
Once you have a foamy mixture, add lemon juice and zest to the top, then continue to whisk with a whisk.
When everything is mixed well, remove the cup, sieve the ingredients in a bowl and let it cool for a while.
Meanwhile, soak the gelatin in a glass of cold water and cut the butter into pieces.

Add the squeezed butter and gelatin sheet to the bowl of the eggs then mix with a whisk to melt the butter – the mixture is slightly warm.
Let your mixture cool at room temperature for 30 minutes, then pour it over your dough—spread with a spatula.
Then put your mold in the fridge for at least 4 hours.
