Battenberg cakes are an irresistible delight with your cup of tea or coffee, here’s an easy recipe for at home and for the whole family.

Material:

For Cake:

– 175 grams flour
– 75 grams ground almonds
– 200 g sugar
– 180 grams butter
– 1/2 tsp baking powder
– 3 eggs
– 2 tbsp milk
– 1 tsp vanilla extract
– Salt
– Few drops of red food coloring
– 150 g apricot jam

For assembly:

– 500 g marzipan – homemade recipe
– fine sugar

Preparation :

Cake preparation:

First preheat your oven to 180°, butter and line 2 cake tins with parchment paper.
Then sieve all purpose flour, ground almonds, baking powder and salt in a large bowl.
Pour your flour mixture into the cup of your stand mixer then add the sugar and butter to the crumbs and beat everything.
In a bowl, beat the eggs with the milk and vanilla extract, then put them in the mixer bowl and beat at high speed for 2 minutes.
Halfway your dough in 2 bowls and then add a few drops of red color to either of the bowls and mix well with a spatula.

Place your two doughs—plain and red—in two molds, then cook in the oven for 30 minutes, let cool, and unmold.
Heat your jam in a saucepan, sift it into a bowl, and put it in the fridge.
After the two cakes are cooked, use your knife to cut off the golden portions of the cakes and then cut each cake in half lengthwise.
Then cut each part in half for a total of 4 natural strips and 4 red or pink stripes, depending on the amount of dye.
Stir the jam then make a layer over the band of red cake and lay the plain band on top, do the same with the rest.

Assembly preparation:

Sprinkle a work surface with icing sugar then roll out your marzipan with a rolling pin and form large rectangles.
Brush the bottom of 4 strips of cake with jam, place them on a rectangle of marzipan and then brush the sides and top of the strips of cake.
Then roll up your marzipan to cover the band of cake and cut off the ends with a knife, doing the same with the rest of the band.
Then cut your cake into slices before serving.
