Zucchini Pancakes and Ricotta Cheese, which are a delight to have for your afternoon snack or with your soup, here is an easy recipe at home.
– 100 grams flour
– 120 grams zucchini
– 60 grams ricotta cheese
– 2 eggs
– 2 tbsp milk
– 1 tsp instant yeast
First wash and grate the zucchini.
Then mix it with all purpose flour, ricotta, beaten eggs, milk, yeast and a pinch of salt and pepper to make a paste.
Grease a large non-stick tava (griddle) with oil and heat on a medium flame for a few seconds.
Take 3 tablespoons of your dough, flatten them on the pan and cook on medium heat for a few minutes.
Then turn it over with a spoon and cook from the other side as well and continue cooking with the rest of the dough as well.
Serve or keep it in an airtight container in the fridge, after serving, just reheat them in the microwave or in a pan.
