Contents: for 24 units – 3 sp per unit

– 120 grams of flour
– 100 g low-fat butter 39-41%
– 6 cl milk
– 3 eggs
– 150 grams of sugar
– 2 tbsp orange or lemon zest
– 1 tsp vanilla extract
– 2 tsp baking powder
– 1 tbsp oil


First, whip the eggs with the sugar, orange or lemon zest, vanilla in a bowl with your mixer on medium speed for 3 minutes.
Then pour the flour and sifted yeast on top and mix everything on medium-low speed.
Combine milk, melted butter, and oil in a bowl, then pour them over the dough and continue whisking.
Cover the bowl and let it cool for at least 2 hours.
Preheat your oven to 180°, butter and lightly flour the 2 madeleine molds.
Stir your dough and then distribute it with a spoon or pastry bag into the molds.
Then put your molds in the oven to bake for 10 minutes, take out your molds, stir them and then put them back in the oven for another 5 minutes.
