Vegetable pancake is a delight to have with your recipes, here you will find the easiest recipe to make it at home.

Component:

  • 3 zucchini
  • 5 carrots
  • 125 grams corn
  • 250 grams broccoli
  • 5 eggs
  • 60 grams breadcrumbs
  • 50 grams flour
  • 1/2 tsp baking powder
  • 50 grams grated Parmesan
  • 2 teaspoons salt
  • 1/2 tsp black pepper
  • Oil

Preparation:

First start by grated the zucchini, sprinkle 1 teaspoon salt over them and sieve through a fine sieve for 30 minutes.
Grate the broccoli and carrots as well and keep aside.
Whisk together the flour, baking powder, breadcrumbs, 1 teaspoon salt, and cottage cheese in a large bowl.
Then add zucchini, broccoli, carrot and corn on top and mix everything together.
In another bowl, beat the eggs and then add them to the bowl of vegetables along with the pepper and mix everything.
Heat a sauté pan — or pan — over medium-high heat, add a drizzle of oil — 1 tsp or more — and stir to coat the bottom of the pan.
Using a large spoon, place mixture in hot sauté pan and flatten to form pancakes.
Then cook for 3 to 4 minutes on each side, reduce the heat if they start to brown too quickly.
Then place your pancakes on a baking sheet covered with absorbent paper.
