– 450 grams flour
– 190 g butter
– 12 cl of whole milk
– 5 eggs
– 50 grams of sugar
– 7 grams baker’s yeast
– 2 tsp salt


First, in a large bowl, mix the flour, baking powder, sugar and salt by hand.
Then heat milk in a saucepan — until hot to the touch — and beat 4 eggs in a large bowl.
Pour the milk into the cup, then add the beaten eggs and mix by hand.
Then add the butter in pieces, keep mixing until a dough is obtained.
Cover your salad bowl with a tea towel and then put it in the fridge for at least 1 hour.

Roll out your dough, flour a work surface and then knead it to release the air—the softer you will be the softer your brioche will be.
Divide your dough into 7 equal balls, butter the cake mold, and then place your balls inside – sticking together.
Cover your molds with tea towels then let stand for 35 to 45 minutes until they have doubled in size.
Preheat your oven to 180° and then crack the last egg.
Then brush the 7 balls and put your mold in the oven to bake for 30 to 35 minutes.
Let them cool for 15 minutes then unmold.
