Lemon and poppy seed muffins, a super soft cake with your cup of coffee or juice, here is the easy recipe at home.


For Muffins:
– 250 grams flour
– 20 grams poppy seeds
– 110 grams unsalted butter
– 200 g sugar
– 24 cl natural yogurt
– 1 tsp baking powder
– Juice of 1 lemon – just pale skin.
– 2 eggs
– 1 tsp vanilla extract
– 1/4 tsp salt

For Lemon Icing:
– 3 tbsp lemon juice
– 50 grams icing sugar


Preparation of Muffins:
First preheat your oven to 180° and place 12 paper boxes into muffin tins.
Soak the poppy seeds in a bowl with 6 cl of hot water for at least 30 minutes.
Then sieve all purpose flour and baking powder and salt in a large bowl and mix sugar and lemon zest in a bowl.
Then in a bowl beat the butter using your mixer on medium speed for 5 minutes, adding the sugar mixture in batches.
While whisking, add eggs one by one, then add poppy seeds, curd, vanilla extract while beating on medium speed.
Then add the flour mixture and mix with the spatula and fill your boxes with flour, then put in the oven to bake for 18 to 20 minutes.

Preparing the Lemon Glaze:
Firstly, in a microwave safe bowl, mix lemon juice with icing sugar.
Then put it in the microwave for 20 to 30 seconds.
You can also add these in a saucepan over medium heat, stirring till the sugar dissolves.

At the end of cooking, coat your muffins with icing before serving.
