Ingredients for 6 people – per serving 4 sp.

  • 1 leek
  • 300 grams broccoli
  • 8 eggs
  • 18 cl of cream
  • 125 g ham sandwich
  • 50 grams grated Parmesan
  • 2 tablespoons olive oil
  • 1 tbsp chopped fresh chives

Preparation:

Firstly preheat your oven to 200° and cover a mold with baking paper including the edges.
Then chop the leek, cut the broccoli into pieces, chop the ham.
Heat the oil in a pan and fry the leek pieces on a medium flame for 10 minutes, while stirring.
Meanwhile, sauté the broccoli in a saucepan filled with boiling water until tender, then run them under running water.
Beat the egg in a bowl, then pour the cream over the top and continue whisking.
Place half the broccoli, leek and ham on the bottom of the mold, pour half the egg and cream mixture over the top, then place the remaining half of the leek, ham and broccoli on top.
Pour the remaining egg mixture over the top, sprinkle with grated Parmesan, and put in the oven to cook for 12 minutes.
Finally, let your frittata cool in the mold for 10 minutes, cut it into 6 slices, sprinkle them with chives and bon appetit tous and serve.
