Who said you have to spend hours in the kitchen for the holidays? Today, I’m going to prove you wrong with this recipe Glazed Turkey Meatballs, with mashed pumpkin. completion time ? less than an hour !
I wanted to make dishes reminiscent of traditional Christmas dishes, like roast turkey…without the constraint of spending time in the kitchen, and cooking for 12 people while having fewer guests. So I got the right idea: dumplings! I love meatballs, I will not repeat a poem on this topic. However, I had never tried turkey meatballs.. and it’s a real pleasure!
To accompany these dumplings, I made a sweet and savory chutney to make them delicious. This sauce is very thick, syrup-like and therefore completely coats the meatballs. It adds a bit of character and matches perfectly with pumpkin puree as well.
I love the sweet and savory taste and thought the sauce was a great idea for brining turkey meatballs. More than just cooking up the juice, this sauce adds a real touch of character to the dish! It can be easily infused with different flavours. Here I used honey, soy sauce and balsamic vinegar along with some spices. You can vary it by using other types of vinegar, different varieties of honey, agave syrup, maple syrup… and all kinds of spices depending on your dish!
I made this recipe in pressure cooker. For a few weeks now, I’ve had the opportunity to test itlagostina domina pressure cooker And I must say I love it! I’m not used to cooking with these types of ingredients, but it still has many advantages, starting with a shorter cooking time (about half that of a classic casserole). It’s really not negligible when you have very little time to cook.
I was also pleasantly surprised because the latest pressurized robots I tested often produced results that didn’t necessarily sound great. Here, no problem, cooking is the same as cooking in a classic casserole dish.
I won’t sell you much based on the merits of this pressure cooker, but its small form is a plus! I find this very well designed, very sophisticated, and like a cast iron casserole, I feel like it can be brought straight to the table for serving. OK, maybe not on Christmas Day… but the rest of the year, why not!
My recipe for Glazed Turkey Meatballs to Replace Roast Turkey
This recipe is actually very simple because it involves mixing the turkey with some herbs and other ingredients to impart a little texture… the result is tender meatballs with good flavor from the turkey.
I actually made it very simple, just adding onions but you can let your imagination run wild by adding mushrooms for example!
To add a little texture to your turkey meatballs and allow them to hold together well, you need to use one or more of the following ingredients:
- whole egg or egg white
- fresh bread crumbs (or dry bread and a little milk)
- fresh cheese
- Of flour
Flour alone is not enough, it has to be used when using fresh cottage cheese or eggs.
Here, I opted for pumpkin puree with it as it can be made easily with a pressure cooker and steamer basket as well. You can opt for other accompaniments such as pan-fried chestnuts and Brussels sprouts (but it will make a lot of balls on your plate) or roast pumpkin with spices!
