Ingredients for 15 patties – 3 sp per serving.
- 200 grams flour
- 500 grams carrots
- 45 grams chopped walnuts, toasted
- 2 tsp baking powder
- 1 teaspoon ground cinnamon
- 1/8 tsp ground nutmeg
- 50 grams brown sugar
- 20 cl of milk
- 1 tbsp oil
- 2 tsp vanilla extract
- 2 eggs, beaten lightly
- 1/4 tsp salt
Preparation:
Firstly wash, peel and grate the carrot, keep aside.
Then in a salad bowl combine the flour, nuts, baking powder, cinnamon, salt, nutmeg and brown sugar.
Then in another bowl, with the help of a whisk, add milk, eggs, oil and mix well.
Mix the contents of two bowls of salad then add grated carrots on top, mix everything to make a homogeneous paste.
Heat a large non-stick griddle over medium heat with a little oil, use a ladle or cookie cutter to shape your patties, then cook them for 2 minutes on each side.
Lastly, serve your pancakes with cheese and honey.
