Zucchini Pizza, rectangular pizza for your weekend, here you will find the easiest recipe to make it at home.
Component:
For Pizza Dough:
- 300g + 80g Flour
- 1 sachet of baker’s yeast
- 3 tablespoons olive oil
- 24 cl water
- 2 teaspoons salt
- 1 beaten egg
For Garnish:
- 200 grams zucchini
- 200 grams yellow squash
- 125 grams ricotta
- 100 grams goat cheese
- 1/2 tsp
- 2 tbsp lemon zest
- 2 tbsp lemon juice
- 1.5 tbsp olive oil
- Salt
- Chilly
- 2 tbsp fresh oregano
Preparation:
Preparation of Pizza Dough:
First put 300 grams of all purpose flour in a bowl, make a well in the center and add yeast, olive oil and salt to it.
Then add water while mixing with a spatula to make a paste.
Cover your dough with a clean tea towel and let it stand for at least 1 hour.
Once the hour is up, flour a work surface with 80 grams of flour and knead your dough by hand.
Line a baking sheet with baking paper, roll out your dough into a rectangle format and put it in the fridge for 30 minutes, preheating your oven to 180°.
Brush with the beaten egg and then put in the oven for 15 minutes… Let it cool down.
Filling Preparation:
Wash zucchini and yellow squash and cut lengthwise into thin slices.
Pour 1 liter of water into a saucepan, bring to a boil, then place the zucchini and squash in a steamer basket.
Place the basket over the pan and let it steam for 8 to 10 minutes.
Cut the turnips, put them in a bowl, sprinkle lemon juice with salt and pepper on top and mix everything… keep aside.
In a salad bowl, mix ricotta, goat cheese and lemon zest with salt and pepper.
Once your dough is chilled, spread your cheese mixture on top, top your zucchini and squash, sprinkle with the sifted mixture, and sprinkle with thyme.
Finally, here’s your Zucchini Pizza, cut and serve… a good meal for everyone.
