Component :

250 g flour
200 grams apricots
130 g softened butter
125 g sugar
3 eggs
1 sachet of vanilla sugar
1/2 tsp baking powder
cinnamon powder

Preparation of soft apricot cake:

First of all preheat your oven to 180°, put butter and flour in a cake tin, sift the flour and baking powder into a bowl.
Wash your apricots, cut in half and remove the pits, then pat dry and set aside.
Beat butter, sugar and vanilla sugar in a bowl, then add a pinch of cinnamon and continue to beat.
Add eggs on top – 1 by 1 – beating, then add flour mixture, beating to make a paste.
Then add the pieces of apricots, this time mix with a spatula, pour your dough into the mold.
Place your mold in the oven to bake for 45 minutes, let cool for a moment, then remove from mold and sprinkle with icing sugar.
