For Cherry Sauce:
- 10 cl of red wine
- 3 tablespoons brown sugar
- 2 tablespoons red wine vinegar
- 2 tablespoons orange juice
- 1/4 tsp orange peel
- 400 g cherries, peeled and cut into wedges
- 2 tsp cornstarch
- 2 tsp water
For Chicken:
- 6 boneless, skinless chicken breasts
- 2 tbsp honey
- 2 tbsp lemon juice
- Salt
- Chilly
Preparation:
Preparation of Cherry Sauce:
First pour the wine into a saucepan, top with brown sugar, vinegar, orange juice and zest, mix with a whisk.
Then bring everything to a boil and boil for 5 minutes.
Then reduce the heat to medium, add the cherries and cook for 10 minutes, while stirring occasionally with a spoon.
Combine water and cornstarch in a bowl, add to saucepan and bring to a boil and then simmer for 1 minute until mixture thickens slightly.
Then pour your sauce into a salad bowl and keep aside.
Preparing Chicken:
First of all preheat your grill.
Then sprinkle a pinch of salt and pepper over the chicken breast.
Then mix honey and lemon juice in a bowl.
Lightly brush the chicken breast with half the honey mixture and then grill for 3 to 5 minutes.
Then turn the chicken over and brush the other surface with the remaining honey mixture and grill for 3 to 5 minutes or until the chicken is cooked through.
Serve your chicken hot and drizzle with cherry sauce.
