  • 120g grated comte cheese
  • 40 ml milk
  • 65 grams butter
  • 6 eggs
  • 70 g flour
  • Salt

Preparation :

First of all preheat your oven to 180°, butter and flour 6 racks.
Melt the butter in a saucepan over medium heat, then add the flour, cook over medium heat for 3 minutes, stirring occasionally.
Then pour milk on top, whisking with a whisk, add a pinch of salt, pepper and nutmeg, increase the heat and continue whisking.
After boiling, boil for 1 minute while stirring continuously, then turn off the heat and add grated paneer and beat with a whisk.
Separate the yolks from the egg whites then pour the yolks into a saucepan, whisking after each addition, and pour everything into a bowl.
Then beat the egg whites in another bowl with a mixer and pour half of them into the first bowl and mix with a spatula.
Add the rest of the egg whites and mix with a spatula, then divide your batter into ramekins.
