200 g shortbread biscuits
50 grams butter
50 grams brown sugar
36 cl full cream
400 g cream cheese: East Philadelphia or St. Moret
150 grams) sugar
1 vanilla pod
300g red fruit
1 sheet of gelatin
First melt the butter, put the cream in the freezer, cut the vanilla pod in half lengthwise and collect the seeds from the vanilla pod.
Then crumble the biscuits either in the bowl of your blender or in a food bag using just a rolling pin.
Next, mix the crushed biscuit with the melted butter and brown sugar in a salad bowl and distribute the mixture into your molds and pack well in the bottom.
Set it aside to fry in an even layer, using the bottom of a glass or a spoon.
Beat the cream cheese in a clean bowl with the help of a whisk, then take the cream out of the freezer and beat it with a beater.
While whisking add the sugar with the vanilla seeds and slowly pour your cream into the cheese bowl and mix with the marise.
To make the red fruit coulis, mash your red fruits in a bowl using a fork.
Then put the extracted gelatin sheet in a vessel and heat it, stir it to melt and leave it to cool for a while.
Pour 1 tablespoon of your curries onto the base of the biscuit, spread your cream on top and put in the fridge for at least 6 hours.
Take out your mussels, top with 1 tbsp of coulis and put back in the fridge for the whole night.
For another recipe, serve whipped cream in glasses with coulis and garnish with red fruits.
