  • 1 shortcrust pastry
  • 600g fresh apricots
  • 100 g sugar
  • 2 tbsp lemon juice
  • 100 g flour
  • 50 grams brown sugar
  • 60g unsalted butter, chilled and cut into small cubes
  • 1/2 tsp cinnamon

Preparation

Preheat your oven to 180 degree Celsius. Unroll your pie dough and place it in a pie pan. Prick with a fork.

Wash, pit and cut the apricots into quarters. Arrange them on pie crust.

In a bowl, mix apricots with sugar and lemon juice. Leave it like this for about 10 minutes so that the juice of the fruit comes out.

Meanwhile, prepare crumble. In another bowl, mix flour, brown sugar, butter and cinnamon. Stir this mixture with your fingers until it looks like a coarse powder.

Sprinkle crumble over apricots.

Bake for about 40 to 45 minutes or until crumble is golden and apricots are soft.

Let it cool slightly before serving. Apricot Crumble Tart can be served warm or at room temperature, and is delicious with a scoop of vanilla ice cream.
