400 grams strawberries
24 cl of milk
24 cl whipping cream
3 egg yolks
125 grams sugar
1 sachet of vanilla sugar
2 tablespoons icing sugar
1 tsp pink food coloring

preparation :

First wash and peel the strawberries, cut them into pieces and mix them with icing sugar.
Then strain your cupcakes through a sieve so that there is only liquid and keep aside.
Pour milk into a saucepan, add cream and heat over medium heat until boiling and remove the pan from the heat.
In a bowl, beat the egg yolks with the sugar and vanilla sugar with a mixer until the mixture turns white.
Pour your mixture into a saucepan, add spatula, whisk, then add while stirring over low heat and leave to cool until it thickens.
Then add the strawberry liquid and mix, put in a freezer container and put in the freezer for at least 6 hours.
