Shrimp Pizza

1 onion, finely chopped
5 ml (1 tsp) ground red pepper flakes
45 ml (3 tbsp) olive oil
1 can (398 ml (14 oz.) chopped tomatoes
2 garlic cloves, chopped

Shrimp
1 1/2 pounds (675 grams) raw medium shrimp, peeled, well drained
45 ml (3 tbsp) olive oil
1 garlic clove, chopped
1 ml (¼ tsp) ground red pepper flakes
60 ml (¼ cup) white wine
30 ml (2 Tbsp.) chopped flat-leaf parsley
Pizza
1 dough for 8 people
500 ml (2 cups) grated mozzarella
Preparation

In a saucepan, saute onion and chili peppers in oil. Salt and pepper. Add tomatoes and let it boil. Boil for about 10 minutes. Add garlic and cook for 2 minutes. let cool. Adjust seasoning.
Shrimp
In a large nonstick skillet, brown the shrimp half at a time in the oil. Salt and pepper. Return the shrimp to the pan. Add garlic and chili, then continue to cook for 1 minute. Deglaze with alcohol. Add 75 ml (cup) tomato sauce and parsley. Adjust seasoning. To keep safe.
Pizza
Place the grill in the middle of the oven. Place an upside down pizza stone or baking sheet on top. Preheat oven to 230°C (450°F).
Divide the dough into four parts. On a floured work surface, roll out the dough one piece at a time into a disc about 28 cm (11 in) in diameter. Sprinkle a little cornmeal (or use parchment paper to coat the dough) on the hot stone and on the pizza board. Place one ball at a time on the board.
Top with a quarter of the remaining tomato sauce. Using a brush, brush the edge of the dough with oil. Bake on a hot stone for about 10 minutes or until golden brown. Remove pizza from oven and sprinkle 1/2 cup (125 ml) cheese over the top. Continue baking in oven for about 2 minutes or until cheese is melted. Remove the pizza from the oven and pour a quarter of the shrimp mixture over the top. Drizzle with olive oil. Bake other pizzas.
