Polish Brioche – Babka, an ultra soft chocolate cake for your afternoon snack, here is the easy recipe at home.
Component:
For Brioche:
– 300 grams flour
– 150 grams of butter
– 30 grams sugar
– 3 eggs
– 3 liters lukewarm milk
– 1 packet of dry yeast
– Salt
For Garnish:
– 50 grams dark chocolate
– 50 grams of sugar
– 2 tsp unsweetened cocoa
– 1 teaspoon ground cinnamon
– 1 egg + 1 egg yolk
Preparation:
Preparation of Brioche:
First of all, mix the crumbled yeast with milk in a bowl.
Then add flour, sugar and salt in a bowl and mix, add milk mixture, eggs 1 by 1 and mix everything by hand.
Then add butter in pieces and keep mixing to make a paste.
Knead the dough on a clean work surface for 10 minutes, then pour it into the bowl to form a film and leave to rest for 2 to 3 hours.
Knead the dough again for 6 minutes, then put it back in the bowl, film it and keep it in the fridge for overnight.
Filling Preparation:
Mix the chocolate pieces with the sugar, cocoa and cinnamon in a bowl and keep aside.
Assembly of Brioche:
Take your dough out of the fridge and roll it out with a rolling pin to make a large rectangle.
Whisk the egg yolks, then brush about 1 to 2 cm from the edges and place your filling in the center of the dough.
Then roll the dough into a ball, cover it with a tea towel and keep it for 1 hour.
Preheat your oven to 180° and line a baking sheet with baking paper.
Beat the egg, brush your dough, and then place it on a baking sheet and place in the oven to bake for 30 to 35 minutes.
