Plum Gugelhuff Cake with Poppy seeds

Guggelhup cake is a traditional German cake that is usually baked in a special pan.

For Cake:

250 grams flour
200 g soft butter
4 eggs
1 sachet of vanilla sugar
1 tsp baking powder
80 grams icing sugar
30 grams sugar
30 ml milk
250 grams plums
1 tbsp poppy seeds

For Icing:

2 tbsp milk
1 tablespoon icing sugar

preparation :

Cake preparation:

First of all, preheat your oven to 180°, butter and flour the Guggelhup mold or bundt mold, separate the yolk from the egg white.
Whisk the egg whites in a bowl, then add the sugar and continue to beat with your mixer on high speed.
In another bowl, using a mixer, beat the egg yolks with the butter, then add the icing sugar and continue whisking.
Add vanilla sugar, continue whisking then add the flour with the baking powder in two batches, whisking to obtain a homogeneous paste.
Then add milk and beat again.
Add the egg whites and mix gently with a spatula to combine everything.
Wash and pit the plums, add to the batter along with the poppy seeds and mix with a spatula.
Pour your batter into the tin and bake for 45 minutes.

Preparation of Icing:

Pour the milk with the icing sugar in a bowl and whisk with a fork.

At the end of cooking, let your cake cool for a moment, unmold then sprinkle it with your icing, cut and serve, bon appetit for all.
