Grandma’s Lemon Pie: One of my favorite desserts!

Lemon pie is a delicious dessert that can be enjoyed year-round.
This sour and sweet pie is easy to make and can be customized according to your taste.
Let me share with you Grandma’s Lemon Pie recipe, it’s the perfect conclusion to the meal.


For dough:

200 grams flour
80 g icing sugar
80 grams butter
1 egg

For the Lemon Cream:

juice of 4 lemons
zest of 3 lemons
130 g sugar
25 grams cornstarch
60 grams butter
3 eggs + 1 egg yolk

For Whipped Cream:

24 cl liquid cream
30 g sugar

Preparation :

Dough preparation:

First of all, preheat your oven to 180 degrees, put butter and flour in a pie pan, add flour, icing sugar and a pinch of salt in a bowl.
Then add butter and mix it by hand to make shortcrust pastry.
Then mix the egg by hand until a dough forms and forms a ball.
Spread your dough into the mould, bottom and sides, prick the bottom with a fork then cut off the excess overflow with a knife.
Place a sheet of parchment paper over the dough, top with dried beans or lentils as a weight, and place in the oven to cook for 15 to 20 minutes.
Take your dough out of the oven, unmold and place your dough on a plate and let it cool to room temperature.

Preparation of Lemon Cream:

First of all, mix lemon juice and juice in a vessel.
Then beat the egg and egg yolk in another bowl
Pour eggs into an omelet with sugar in a lemon saucepan, put on medium heat and cook, stirring constantly.
Add cornstarch and continue whisking on medium heat for 3 to 4 minutes until your mixture thickens
Remove from heat, add butter and keep whisking until butter is melted.
Spread your cream on the dough, grease the surface with marisse, and then put in the fridge for at least 60 minutes.
Put the cream in the freezer for 15 minutes.

Preparation of Whipped Cream:

First take your cream out of the freezer, pour it into a bowl.
Then beat it with a beater until it doubles in volume.
Then while stirring on high speed, add sugar in a drizzle from above.

Take your pie out of the fridge, pour your cream on top and garnish with a slice of lemon before serving and everyone’s hungry.
